For rice, they have rice from Yamagata, and also "red sushi rice" made with their meticulous red vinegar they make themselves that has fermented for five years.
Their popular "toasted sushi" is made with splendid alfonsino, rosy seabass, medium-fatty tuna, salmon, and more.
