Osawaya’s first shop
This long-established Mizusawa udon shop is loved not only by locals but folks from all over.
The long-established Udon shop, Osawaya, which started as a small shop of about 100m2 in 1970, currently operates four shops in the Gunma Prefecture. They serve Mizusawa Udon, one of the three famous types of udon.
Their noodles are made in a two-day process by repeatedly kneading the dough and letting it rest to assure a clean color, and a strong smooth texture. The ingredients are simple, using only wheat flour and salt.
The flavorful soup, carefully prepared every morning, is made by slowly simmering niboshi (dried sardines), kombu seaweed, and dried bonito flakes. They then finish by mixing this broth with a white dashi soup stock and a secret "kaeshi” broth, bringing together the flavorful, condensed taste of the ingredients.
The best way of eating udon at Osawaya is “Zaru Udon” for 770 yen, dipping the noodles in the flavorful soup. Since the noodles themselves taste wonderful, eating them without dipping in the soup is also a delightful way.
Other popular menus include "sesame soup udon" (880 yen) using aromatic golden sesame seeds and the "maitake mushroom tempura" (880 yen) which used thick maitake mushrooms with a strong aroma and taste. The restaurant also offers a wide range of side dishes, such as "Miso Oden" for 330 yen and "Fluffy Dumplings" (limited production) for 330 yen, all of which go well with the noodle menus.
