The shop is owned by Fukasaku Farm, which has been farming for six generations in Hokota City, Ibaraki Prefecture, and aims to produce "the ultimate Baumkuchen that only a farmer can make.”
There is a lot of attention to detail, such as using fresh strawberries and melons harvested at their own farm as ingredients, but they are particularly careful for selecting the eggs.
The only eggs they use are of the "Boris Brown" variety, which have a rich and intense flavor. Moreover, the yolk is very thick and has a good elasticity that you can pick it up with your fingers.
Just as the ingredients are carefully selected, no corners are cut in the cooking process. The baked goods are baked in a high-temperature oven at 350 degrees Celsius for about 60 minutes, with the craftsman carefully checking each layer to ensure that the texture is both moist and fluffy.
