Hakata Ajidokoro Sukiyaki/Mizutaki Iroha Hakata Main Store
Irresistible flavor in a rich, creamy chicken bone broth.
Founded in 1953 as a sukiyaki restaurant, Iroha’s signature dish has become its mizutaki hot pot, introduced around 1965. The secret to its rich flavor lies in the white chicken bone broth, meticulously prepared using premium Kagoshima Akadori “Akadori Satsuma” chicken. The broth is carefully skimmed over a low flame, resulting in a creamy, flavorful soup.
The meal begins by sipping the broth from a tea cup, allowing you to fully appreciate its delicate taste before adding the ingredients to the hot pot. Tender chicken pieces, a special chicken meatball recipe, and an abundance of seasonal vegetables such as spinach and cabbage provide a satisfying dining experience. The homemade ponzu sauce, crafted from soy sauce and mandarin orange, perfectly complements the ingredients, enhancing their natural flavors.
In addition to the signature “Jidori Mizutaki Course,” other popular offerings include the “Iroha Special Sukiyaki”, prepared just as it was at the time of the restaurant’s founding, and the “Black Wagyu Sirloin Shabu-Shabu.”
A wide selection of a la carte dishes is also available, including “Kumamoto Direct Horse Sashimi” and “Hakata Specialty Mentaiko.”
