The main ingredient of the signature "Tontoro Ramen" is pork char siu, which is made of the neck part of a pig, and only a small amount of it can be obtained from a single pig.
The pork is slowly simmered in a secret sauce over a long period of time, resulting in a melty & tender texture that once you try it, you will become addicted to its deliciousness.
The rich pork bone broth, which contains chicken bones and bonito extract, and medium-thick noodles with firm texture create an excellent harmony.
You can customize your ramen to your liking by topping it with a half-boiled egg or karashi takana (Chinese mustard greens), the hardness of the noodles, and the flavor of the soup (rich or light) when ordering.
