Akita Specialty Kinman
The quintessential Akita souvenir! A castella bun with a gentle, sweet flavor.
A beloved castella bun, cherished for over 60 years as a classic Akita confection. The name “Kinman” comes from the former Kinza-gai shopping street near Akita Station, where the shop was originally located, shortening “Kinza-gai no Manju” (Kinza-gai buns) to "Kinman."
Each Kinman is made by wrapping a smooth white bean paste with eggs in a castella-like batter made with honey and eggs, then baking it to perfection using traditional confectionery machines. Since its founding in 1953, the original recipe and methods have remained unchanged, offering a mildly sweet, comforting flavor.
Kinman comes in three packaging types:
The Individually Wrapped Type is ideal for sharing and storing, with a 14-day shelf life, making it perfect as a souvenir.
The Fresh Type, available only at the flagship store and select locations, allows you to enjoy Kinman at its freshest.
The Pack Type has a longer shelf life than the fresh type and is more affordable than the individually wrapped version.
