Umami Tasuke
The taste of Date, which originated after World War II, is served at the restaurant that is said to have created the beginning of Sendai beef tongue yaki.
It is said that the origin of Sendai beef tongue roast is the very first "Umami Tasuke," which is considered to be the origin of the dish, when Keishiro Sano, the first owner of Tasuke, opened a restaurant specializing in grilled beef tongue in Sendai City just after the end of World War II, using the "salt seasoned, grilled on a net over charcoal" cooking method. Tasuke has been a popular restaurant since 1948, and now attracts many fans throughout Japan.
The exquisite saltiness of the beef tongue, passed down as a secret technique from the restaurant's founder, who taught that "salt is the key to maximizing the flavor of beef tongue," is simple but brings out the best flavor of the beef tongue. The restaurant is so keen to have its customers taste this technique that it still offers only salt-flavored dishes on its menu.
The restaurant is always filled with the lively voices of the chefs, and the heat coming from behind the counter creates an atmosphere that transports you back to the early Showa period. The restaurant is a place where you can feel the atmosphere after the end of World War II, and the exquisite grilled beef tongue, made with a secret technique that brings out the best flavor, is truly exquisite.
