Hyakkaen "Niigata Kohaku"

Founded in 1882 (Meiji 15), Hyakkaen is a long-established wagashi (traditional Japanese confectionery) shop in Niigata. Now in its fourth generation, the shop continues to honor tradition while innovatively incorporating elements of Western confectionery into its creations.

"Niigata Kohaku" is a modern take on kohakuto, a traditional Japanese sugar candy made by adding sugar and syrup to boiled agar and then allowing the surface to dry. This version is shaped into eight iconic symbols of Niigata, including rice, sake, Bandai Bridge, edamame, snow, Sado Island, waves, and fireworks. Each piece offers a different flavor, such as yuzu, matcha, and blueberry. The rice and sake pieces, in particular, are made using sake from Imayo Tsukasa Sake Brewery, which is known for its commitment to pure rice brewing. The contrast between the crispy exterior and the soft, jelly-like interior adds to the delightful experience.

The packaging features charming illustrations inspired by Niigata, making it an attractive and thoughtful souvenir. Opening the small box feels like discovering a treasure, with the colorful candies arranged like a puzzle.
